One of the things I’ve learned over the years is that healthy cooking doesn’t begin when you turn on the stove—it begins at the grocery store.

After major holidays, many stores reduce the price of premium cuts of meat to make room for new inventory. When I found four bone-in rib-eye steaks on sale for about $7 each, I didn’t just see one great dinner—I saw several future meals. Three steaks went into the freezer, and one became this simple skillet meal with frozen kale, garlic, butter, olive oil, and a blend of cheeses.

The recipe is simply the example. The lesson is learning how to build flavor naturally.

Ingredients

Serves 1

  • 1 bone-in rib-eye steak (about 12 ounces)
  • ¼ cup olive oil
  • 1 package frozen kale (approximately 8–10 ounces)
  • 2 tablespoons chopped garlic
  • 2 tablespoons unsalted butter
  • 2 ounces shredded mozzarella, provolone, Asiago, and mild cheddar cheese blend
  • Freshly ground black pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Sear the rib-eye on both sides until well browned, adjusting the cooking time to your preferred level of doneness.
  3. Reduce the heat to medium.
  4. Add the frozen kale and stir until heated through, allowing it to absorb the flavorful pan juices.
  5. Stir in the butter, chopped garlic, and freshly ground black pepper.
  6. A few minutes before the steak reaches your preferred doneness, sprinkle the cheese evenly over the kale.
  7. Cover the skillet and allow the cheese to melt.
  8. Transfer the steak to a serving plate and spoon the garlic butter kale over the top.
  9. Serve immediately.
