That’s exactly why noaddedsaltguy exists.

This project was created to help people learn how to cook flavorful, satisfying meals without relying on a salt shaker or heavily processed foods to make everything taste good.

Not through gimmicks.
Not through “diet food.”
And not through complicated chef techniques that only professionals understand.

Just practical, real-world cooking systems that help food actually taste good again.

Why I Started This Project

One thing I noticed over and over is that people are constantly told what they should avoid eating…

…but almost nobody actually teaches them what to DO instead.

“Eat less salt” sounds simple until you’re standing in your kitchen wondering:

  • What am I supposed to make?
  • How do I make this taste good?
  • Where does flavor even come from without salt?

That’s where most people get stuck.

The goal of noaddedsaltguy is to make that process feel less intimidating and a lot more doable.

I want people to feel confident cooking again — even if they’re beginners.

Because low-salt cooking should still feel comforting, flavorful, practical, and enjoyable.

About Carlo

After spending most of my life around food, I’ve learned that great meals are not about relying on a salt shaker to create flavor.

Over the years, I’ve owned and operated restaurants and bars, worked in the wholesale pizza business, and spent countless hours learning what actually makes food taste great in real-world kitchens.

I’m also a cancer survivor and a liver transplant recipient, so I understand firsthand how overwhelming dietary changes can feel when nobody really teaches you how to cook differently.

That experience helped shape the way I approach food today: practical meals, real flavor, and cooking systems people can actually live with long term.

The foundation behind noaddedsaltguy is simple:
Using the ingredients WITHIN the meal to season the meal.

The goal isn’t to make “diet food.”

The goal is to make food you genuinely look forward to eating.

What Makes These Classes Different

These classes are different.

Instead of just watching someone cook, you’ll learn step-by-step how to actually build flavorful meals from your own kitchen in a practical, beginner-friendly way.

Classes are live, online, and designed to feel approachable — not intimidating.

You can cook along in real time or simply watch and learn.

During class, I guide you through the process, explain what’s happening, answer questions, and help make cooking feel manageable instead of overwhelming.

The focus is on building confidence and teaching systems you can use long after the class ends.

Why are the classes so affordable?

My goal is to make low-sodium cooking accessible to as many people as possible. Because classes are taught online using a guided video format, I can keep costs low while still being there live to answer questions and guide the process.
